Perfect Smoked Holiday Ham Recipe
Ingredients:
- 1 sugar-cured ham (10-15 pounds)
- Cherry or fruit wood chunks
- Honey Dijon Mustard (1 bottle)
- Brown Sugar (1 lb)
- Pineapple Juice
Instructions:
Step 1: Prepare the Smoker
- Set up your smoker for indirect cooking and preheat it to 225°F.
Step 2: Prepare the Ham
- Unwrap and pat dry the thawed ham with paper towels to remove excess moisture.
Step 3: Apply Rub to the Ham
- Coat the outside of the ham generously with honey Dijon mustard.
- Lightly dust the ham with brown sugar, creating a paste-like coating. Avoid applying too much sugar at this stage.
Step 4: Smoke the Ham
- Once the smoker reaches 225°F, add cherry or fruit wood chunks for flavor.
- Place the prepared ham on the smoker and let it smoke for 2 hours at 225°F.
Step 5: Baste and Wrap the Ham
- After 2 hours, remove the ham and wrap it tightly in aluminum foil.
- Before sealing the foil, baste the ham with pineapple juice using a spray bottle.
Step 6: Finish Cooking and Glaze
- Return the wrapped ham to the smoker and cook for an additional hour at 225°F.
- After 1 hour, check the internal temperature of the ham. The target temperature is 145°F.
Step 7: Glaze and Rest the Ham
- Once the ham reaches 140°F internally, carefully open the foil, creating a ‘boat’ to hold the juices.
- Sprinkle brown sugar generously over the ham and spray it with pineapple juice.
- Allow the ham to smoke uncovered for 1 more hour to create the glaze.
Step 8: Rest and Serve
- After 4 hours total cook time, remove the ham from the smoker.
- Tent the ham loosely with foil and let it rest for 20-30 minutes before slicing.
Step 9: Carve and Enjoy!
- Use a sharp carving knife or an electric fillet knife to slice the tender, flavorful smoked ham.
