Creamy Tomato Basil Soup
Ingredients:
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 2 cups vegetable or chicken broth
- 1 teaspoon sugar
- Salt and pepper to taste
- 1/2 cup heavy cream
- Fresh basil leaves for garnish
- Grated Parmesan cheese (optional)
Instructions:
- Heat olive oil in a large pot over medium heat. Add chopped onions and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.
- Pour in the crushed tomatoes and broth. Stir well to combine. Add sugar, salt, and pepper to taste.
