This Simple Taco Soup recipe is a fall and winter staple! It’s an easy, protein-packed soup full of zesty, crave-worthy flavor
Ingredients:
- 1 pound ground beef (or ground turkey)
- 1 onion, diced
- 1 packet taco seasoning mix
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) pinto beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (15 ounces) diced tomatoes
- 1 can (4 ounces) diced green chilies
- 4 cups beef or chicken broth
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, sliced jalapeños, diced avocado, chopped cilantro, tortilla strips
Instructions:
- In a large pot or Dutch oven, cook the ground beef and diced onion over medium heat until the meat is browned and the onion is tender. Drain off any excess fat.
- Add the taco seasoning mix to the cooked beef and onion. Stir well to combine and cook for another minute.
- Add the black beans, pinto beans, corn, diced tomatoes, diced green chilies, and beef or chicken broth to the pot. Stir everything together.
- Bring the mixture to a boil, then reduce the heat to low. Let the soup simmer uncovered for about 15-20 minutes to allow the flavors to meld together.
- Season with salt and pepper to taste.
- Serve the taco soup hot, garnished with your choice of toppings like shredded cheese, sour cream, sliced jalapeños, diced avocado, chopped cilantro, or tortilla strips.
