Ingredients:

  • 6 large eggs
  • 3/4 cup granulated sugar
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 3/4 cup Brandy, Rum or Bourbon (Brandy is the most traditional)
  • Additional nutmeg for garnish
  • Cinnamon sticks (optional)

Instructions:

  1. Separate the egg yolks from the whites. In a large mixing bowl, whisk the egg yolks and sugar until creamy and the sugar is dissolved.
  2. In a saucepan, heat the milk, heavy cream, and nutmeg over medium heat until it begins to steam. Do not let it boil.
  3. Slowly pour about a cup of the hot milk mixture into the egg yolk mixture while whisking constantly to temper the eggs.
  4. Pour the tempered egg mixture back into the saucepan with the remaining hot milk mixture. Cook over medium heat, stirring constantly, until it thickens slightly. It should coat the back of a spoon.
  5. Remove the mixture from heat and stir in the vanilla extract and bourbon/rum.
  6. Strain the eggnog through a fine-mesh sieve into a bowl to remove any cooked egg bits.
  7. Cover the bowl and refrigerate until chilled, preferably for a few hours or overnight.
  8. Before serving, give the eggnog a good stir. Pour into glasses, sprinkle with a pinch of nutmeg on top, and garnish with cinnamon sticks if desired.
