If you’re looking for an easy weeknight or weekend recipe, these Pineapple Chipotle Hawaiian Chicken Skewers will blow you away. The sweet and spicy flavors of the pineapple chipotle BBQ sauce, combined with chicken, pineapple, and veggies, are amazing. Bring out the plastic kiddie pool because you’ll feel like you’re at the beach.
Ingredients
- Lane’s Island Dust Rub
- Lane’s Pineapple Chipotle
- 2 chicken breasts
- 1/2 cup soy sauce
- 1 cup fresh pineapple chunks
- 1 red bell pepper
- 1 orange bell pepper
- 1 red onion
- 1/4 cup brown sugar
- 1/4 cup water
- Optional: brown rice or fried rice
Directions
- Mix Marinade:
- Combine soy sauce, brown sugar, 1 tbsp Lane’s Island Dust rub, and water.
- Marinate Chicken:
- Cube chicken breasts and place in a bowl.
- Pour half of the soy sauce mixture over the chicken, mix well, and refrigerate for 1-2 hours.
- Prepare Veggies and Pineapple:
- Chop bell peppers and onion into 2-inch pieces.
- Combine chopped veggies and pineapple chunks in a separate bowl.
- Add the remaining soy sauce mixture and refrigerate for 1-2 hours.
- Preheat Grill/Smoker:
- Heat to 250 degrees F.
- Assemble and Season Skewers:
- Thread chicken, pineapple, and veggies onto skewers: bell peppers, onion, chicken, pineapple, then bell peppers again.
- Season with Lane’s Kapalua Rub.
- Grill Skewers:
- Smoke for 20-30 minutes, then rotate.
- When the chicken reaches 160 degrees F, brush with Lane’s Pineapple Chipotle sauce.
- Return to the grill for 10-15 minutes until the chicken reaches 165 degrees F.
- Serve:
- Pull skewers from the grill and enjoy over a bed of brown or fried rice.
Recipe Note
- Try using red, yellow, and orange bell peppers.
