  1. Prepare Tomatoes:
    • Slice tomatoes into ¼” to ½” thick discs.
    • Soak in a mixture of buttermilk and One Legged Chicken sauce for 30 minutes up to 2 hours in the refrigerator.
  2. Prepare Breading:
    • In a large bowl, mix together cornmeal and ¼ cup Signature Rub.
    • Take tomato slices directly from the buttermilk mixture and coat them thoroughly in the cornmeal breading.
  3. Fry Tomatoes:
    • Preheat oil to 350°F.
    • Fry the tomatoes for 4-5 minutes, flipping occasionally until the coating is golden brown.
