Ingredients
- One Legged Chicken Buffalo Sauce,
- Lane’s Signature Rub
- 3-4 large green tomatoes
- 1 quart buttermilk
- 1-2 lbs cornmeal
- Vegetable or corn oil
Directions
- Prepare Tomatoes:
- Slice tomatoes into ¼” to ½” thick discs.
- Soak in a mixture of buttermilk and One Legged Chicken sauce for 30 minutes up to 2 hours in the refrigerator.
- Prepare Breading:
- In a large bowl, mix together cornmeal and ¼ cup Signature Rub.
- Take tomato slices directly from the buttermilk mixture and coat them thoroughly in the cornmeal breading.
- Fry Tomatoes:
- Preheat oil to 350°F.
- Fry the tomatoes for 4-5 minutes, flipping occasionally until the coating is golden brown.
- Allow to drain on a cooling rack and cool for a few minutes before serving.
- Serve:
- Enjoy on their own with some Sorta White sauce, or on a classic BLT!
