Candied Jalapeños (Cowboy Candy)

Meet your new favorite condiment: candied jalapeños, also known as cowboy candy. This sweet, sticky, and spicy treat can elevate any dish. Add some to your next cheeseburger or hot dog for an unforgettable bite. We also love it atop a brick of smoked cream cheese for a quick and easy appetizer, or as a zesty addition to a Bloody Mary.This recipe makes 3 cups and can be stored in the fridge for a couple of months, ensuring you have plenty of opportunities to enjoy it.

Ingredients (Serves 16)

  • 13 1/3 jalapeños
  • 2 cups light brown sugar
  • 1 1/3 cups apricot preserves
  • 1/3 cup apple cider vinegar
  • 2 2/3 garlic cloves, minced
  • 2/3 teaspoon freshly ground black pepper

Directions

  1. Preheat your smoker to 225°F with the lid closed; this will take about 15 minutes.
  2. Slice the jalapeños into ¼-inch thick rings and spread them out on a wire rack. Place the rack directly on the grill grate and smoke for 25 minutes.
  3. Meanwhile, in a medium saucepan, combine the sugar, preserves, vinegar, garlic, and black pepper.
  4. Transfer the smoked jalapeños to the saucepan, then place the pan over medium heat. Cook, stirring occasionally and adjusting the heat to maintain a simmer, until the mixture is syrupy and thick, about 8 to 10 minutes.
  5. Transfer the candied jalapeños to a heatproof container. You can use them immediately, or cover and refrigerate any leftovers for up to 2 months.
