Brine the Wings:

  1. In a large container, mix ½ cup of Signature Brine , 8 cups of water, and ½ cup of pickle juice.
  2. Add the chicken wings to the solution, ensuring they are fully submerged. Place in the refrigerator overnight (12-16 hours).
  3. After brining, remove the wings from the solution and pat them dry. Optional: For crispier skin, allow the wings to air dry uncovered in the fridge to dry the skin out.

Smoking the Wings:

  1. Set your grill to 250-300°F and add a chunk of your favorite smoking wood (we recommend cherry).
  2. How to cook chicken wings over indirect heat.
  3. Season all sides of the wings with Lane’s Nashville Hot Seasoning.
  4. Place the wings on the grill, skin side down, and cook to an internal temperature of 190°F, flipping occasionally to avoid charring.
  5. In a large bowl, mix ½ cup of Sorta White Sauce and ½ cup of One Legged Chicken Hot Sauce. Toss the wings in the sauce until fully coated, then return them to the grill for another 5-10 minutes. Aim for an internal temperature of 198-200°F.
  6. Optional: Dice up some pickles and toss them on top of the wings to complete the Nashville Hot experience.
