Light, crisp, and refreshingly tangy, cucumber salad is the perfect side dish for warm days or when you need something cool to balance a hearty meal. Made with just a few fresh ingredients, it’s quick to prepare and packed with flavor.
Ingredients:
2 large cucumbers, thinly sliced
½ small red onion, thinly sliced
⅓ cup white vinegar
2 tablespoons sugar
2 tablespoons water
1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
½ teaspoon salt
¼ teaspoon black pepper
Optional Add-ins:
1 clove garlic, minced
¼ cup sour cream or Greek yogurt for a creamy version
Instructions:
Prepare the cucumbers: Slice the cucumbers very thin (use a mandoline if you have one for even slices). Place them in a large bowl. Add the onions: Thinly slice the red onion and add it to the bowl with the cucumbers. Make the dressing: In a small bowl, whisk together the vinegar, sugar, water, dill, salt, and pepper until the sugar dissolves. If you’re adding garlic, mix it in now. Combine: Pour the dressing over the cucumbers and onions. Toss well to coat everything evenly. Chill: Cover and refrigerate for at least 30 minutes before serving to let the flavors meld. (It gets even better after a few hours.) Optional Creamy Version: After chilling, stir in the sour cream or Greek yogurt if you want a creamy cucumber salad. Serve: Garnish with extra dill if desired. Serve cold
