Rotel Cream Cheese Sausage Balls

Ingredients:

  • 1 lb hot breakfast sausage, uncooked
  • 2 cups cheddar cheese, shredded
  • 1 8oz block of cream cheese, softened
  • 1 box Red Lobster Cheddar Bay Biscuit Mix (sub Bisquick)
  • 1 (10oz) can Rotel diced tomatoes & green chilies, drained

Instructions:

  1. Preheat your oven to 375°F (190°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it with cooking spray.
  2. In a large mixing bowl, combine the uncooked breakfast sausage, shredded cheddar cheese, softened cream cheese, Red Lobster Cheddar Bay Biscuit Mix (or Bisquick), and the drained Rotel diced tomatoes & green chilies.
  3. Mix all the ingredients together thoroughly until well combined. It might be easier to use your hands to ensure everything is evenly distributed throughout the mixture.
  4. Once the mixture is thoroughly combined, start forming small balls, approximately 1 inch in diameter, and place them on the prepared baking sheet. Ensure there’s some space between each ball for even baking.
  5. Bake the sausage balls in the preheated oven for about 20-25 minutes or until they turn golden brown and are fully cooked through.
  6. Remove the sausage balls from the oven and allow them to cool for a few minutes before serving.

These Rotel Cream Cheese Sausage Balls are great as appetizers or party snacks. Serve them warm with your preferred dipping sauce, such as ranch dressing or a spicy mayo dip, for a delicious treat!
