Preparing the Pretzel Bites
Prepare the pretzel dough by combining warm water, sugar, and salt in the bowl of a stand mixer. Sprinkle the yeast on top and let it sit until it starts to foam, approximately 5-6 minutes.
Ingredients:
- 1 1/2 cups warm water (110°F to 115°F)
- 1 tablespoon sugar
- 2 tablespoons kosher salt
- 1 0.25-oz packet of active dry yeast
Add the flour and melted butter, then attach the dough hook. Mix on low speed until well-combined. Increase the speed to medium and mix until the dough is smooth, pulling away from the sides of the bowl, for about 5 minutes more.

Remove the dough, grease the bowl well with nonstick spray, and return the dough. Cover with a cloth or plastic wrap and let it rise until doubled in size, approximately 1-2 hours.

In a large pot, bring water to a boil. Add baking soda and stir to dissolve. Line a baking sheet with parchment paper.

Position the cast iron pan on the smoker grates. Close the lid and smoke for 15–20 minutes, or until the cheese has melted, and the top achieves a golden brown perfection.
