For the Tacos:
Corn tortillas (warm them before serving) 1 cup diced white onion 1 cup chopped fresh cilantro Lime wedges for serving Your favorite salsa (roja or verde) Crumbled queso fresco or cotija cheese (optional) Sliced radishes (optional)
Instructions
Marinate the Meat: In a bowl or ziplock bag, combine garlic, lime juice, orange juice, olive oil, cumin, chili powder, smoked paprika, salt, and pepper. Add the steak, coat well, and marinate in the fridge for at least 1 hour (up to overnight for best flavor). Grill the Steak: Heat a grill or cast-iron pan over high heat. Remove steak from marinade and grill 3–5 minutes per side for medium-rare. Let rest 5 minutes, then slice thinly against the grain. Warm the Tortillas: Warm tortillas on the grill or in a skillet until slightly charred. Assemble the Tacos: Layer sliced steak on tortillas. Top with diced onion, cilantro, salsa, and cheese if using. Garnish with lime wedges and sliced radishes.
